Light and filling – I would say that this is legit vegetarian food. Lately I have been indulging in a healthy veggie and green diet so I decided to stop at The Foundation on Main Street for dinner. The first thing I saw when I walked into the restaurant was the huge wooden sign on top of their bar saying “Vive le Resistance” and I knew I was in for something out of the ordinary. On the side is their open kitchen where you can see how they are cooking up the dishes and since Justin Timberlake was playing on the speakers, the cooks were all singing along creating a very fun vibe in the resto. Overall The Foundation is fun, spacious, comfortable and a bit hipster like usual vegetarian restaurants. Oh and on the side note, servers are cute and nice there.
I was told to try the nachos there but looking at the size of that dish was horrifying for just two people, so we stuck with pastas and it was also a great alternative. The image above is the “Spicy Peanut” (CAD12) with cauliflower, peanuts, onions, tofu topped with raw spinach mingled with mild spicy peanut sauce which gives the dish an ultimate taste bud trigger. Biting into the cauliflower was heavenly with the sauce soaked into the cauliflower cloud making it extra tasty and juicy.
I had a bite of this and I closed my eyes as if I had a food epiphany. The “Mango Forte” (CAD12) is lovely tossed multi-coloured pasta, with broccoli, zucchini in coco sauce with flat bread on the side a raw spinach sprinkled with cheese on top. This is the first vegetarian pasta that I have loved so much with its creamy coco taste that wasn’t heavy and drenching the pasta.
